This study involves the development of a nutraceutical product using coconut water as the main ingredient by incorporating some of the traditionally used natural antioxidants, such as, extracts from plants like Trichopus, Sp.Carrot, Grape seed. etc, without affecting stability. The research involves characterization of taste, anti-oxidant potential and stability of a variety of different formulations.
