Abstract : Nutrigenomics is an emerging field that has an intersection between genomics and nutrition. It delves into how the genetic variations are affecting the food response of the individuals and how the gene expressions influence the dietary components by providing insights into personalized nutrition. This chapter explores the dynamic relationship between genetics, nutrition, and food science. This field is deeply connected to food science, which focuses on the composition, processing, and functional properties of foods. Understanding nutrient-gene interactions allows food scientists to develop functional foods, enhance bioavailability, and create tailored dietary strategies that optimize health. The advances in omics technologies include transcriptomics, metabolomics, and genomics. These are further augmented by the connection between food science and nutrigenomics by identifying the key bioactive compounds and their function in disease mitigation. Additionally, food processing and formulation strategies are evolving to preserve or enhance the nutritional components that modulate gene expression. This chapter highlights the integration of nutrigenomic insights into food science, emphasizing their potential to revolutionize dietary recommendations and the food industry. Ethical, regulatory, and practical considerations in translating nutrigenomic research into real-world applications are also discussed. By bridging molecular biology and food science, nutrigenomics paves the way for precision nutrition and innovative food solutions that support personalized health and well-being.
