Bio

Dr. Jayasree Joshi T has completed her doctoral program in Food Process Engineering from Agricultural and Food Engineering Department, Indian Institute of Technology Kharagpur, India. She holds a Master’s degree in Food Process Engineering from National Institute of Food Technology, Entrepreneurship and Management, Thanjavur (NIFTEM-T), and a Bachelor’s degree in Food Technology from Cochin University of Science and Technology, Kerala, India with Gold Medal. She has over eight years of experience in teaching and research. Her primary research interests include millet processing, grain storage, non-thermal processing, process modelling, and optimization.

She has authored and co-authored more than 50 research publications, edited 2 books and has received several best paper and poster awards at national and international technical platforms. She is also the recipient of ICFP6 Young Scientist Award 2026 (Bangkok, Thailand), and the Best Reviewer Award 2025 from the Journal of Agricultural Engineering of India (JAEI), by the Indian Society of Agricultural Engineers.

Research Work

Dr. Jayasree Joshi’s research focuses on advancing sustainable millet processing and storage technologies to address postharvest losses, nutritional degradation, and storage stability. Her work integrates food process engineering with artificial intelligence, machine learning and multivariate analysis techniques. She has developed predictive models for estimating the allowable storage life of pearl millet and finger millet and introduced innovative processing strategies that minimize decortication losses while preserving nutritional quality. Her research provides scientific tools for optimizing millet processing, improving storage management, and enhancing value addition across the millet supply chain. These contributions support climate-smart agriculture, food and nutritional security, and sustainable processing technologies, offering practical solutions for farmers, processors, and the food industry while promoting the wider commercialization of nutrient-rich millets.
