Bio

Dr. M. Indumathi is an Assistant Professor in the Department of Food Science and Nutrition at Amrita Vishwa Vidyapeetham, Coimbatore. She completed her M.Tech in Food Technology in 2017 and earned her Ph.D. from Tamil Nadu Veterinary and Animal Sciences University in 2021.Her research expertise spans food microbiology, food biotechnology, and functional food product development, with a strong emphasis on food safety, quality analysis, and processing technologies. She has contributed to research on microbial pigments, bioactive compounds, and the valorization of food industry by-products, alongside work in dairy technology and value addition in food systems. She has published research articles, book chapters, and conference papers in areas related to food science and microbiology. Her academic contributions also include guiding undergraduate research projects focused on innovative product development and sustainable food solutions. She has received research excellence recognition and merit scholarships during her academic career. Her broader academic interests include sustainable food processing, agricultural waste utilization, and the development of nutritionally enhanced food products addressing current challenges in food safety and public health.
